What it takes to open a restaurant

As many in the industry will attest, operating a restaurant is a tough business, with a low profit margin, high overhead, inspections, regulations and 16-hour days.

I'm so glad to read the article covering the hard work that Mike and Jen have put into their fabulous new restaurant on High Street. I've been by and can attest to the stunning decor of their new establishment. I hope all Palo Alto comes out to try their fare when the new place opens. I know I'll be there!
