Can't Wait to Try Another Cooking Demonstration at the LibraryUploaded: Sep 28, 2020
Our family enjoys checking out books and events at our local libraries. Last spring when the libraries were closed we really learned just how much we rely on them. Thankfully we had about 50 books checked out and many books that we've purchased over the years from The Friends of the Library book sales to keep our kids busy reading. However, I was so grateful when the library started to offer curbside pick up appointments because our kids were craving new material.
While most of the events and books we check out are for our kids, last week I decided to try one of their adult online events. And I loved it. On Friday I watched Andrea Nguyen’s cooking demonstration of Vietnamese Rice Paper Rolls. I’ve made these rolls before but I never felt like my sauce was quite right or the rice paper was rolled properly. Her demonstration was wonderful. It was in a webinar format so I didn't need to worry about my 3 year old interrupting because she needed a snack or help finding a toy. Andrea was so honest and helpful. I really appreciated her tips about which brands of fish sauce to buy, how to cut chiles, and how to prepare the rice paper.
Over the weekend I made her Shrimp and Mango Rice Paper Rolls with our daughters. It was so much fun! We used her suggestion to lay all of the ingredients out and let everyone roll their own rolls with their favorite fillings. Our kids enjoy baking and cooking with me frequently in the kitchen, but this recipe is a new favorite. It is healthy, with a lot of fresh ingredients, and everyone can change it up for their own tastes.
I just bought one of her cookbooks, Vietnamese Food Any Day, and I can not wait to try more of her flavorful recipes with our kids this fall.
